Makes enough for 10 guests
For the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (yields 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
To prepare the Citrus Syrup: Place the listed ingredients into a saucepan, heat until it reaches a light boil, agitating so the sugar melts. After that, turn off the burner and leave to reach room temperature entirely. Decant into an sealable bottle, cap it and refrigerate it chilled, it can be stored for around one month.
For the Cocktail Base: Pour all the spirits and syrup into one sizeable container, leave to sit for one hour, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.
For serving: Pour 85ml of your premix into a mixing glass packed with ice, and stir lightly for about 60 seconds to chill. Pour into a frosted cocktail glass or a similar vessel, decorate with the cranberries and finish using a light spray of the essential oil over the drink.
